Pipis in XO Sauce

Serves: 4 pers |

Prep: 5 mins |

Cook: 10 mins

Ingredients:

½ tbsp vegetable oil
1kg pipis
2 tbsp AYAM™ XO Sauce
1 tbsp AYAM™ Oyster Sauce
1 tbsp AYAM™ Sesame Oil
1 tbsp cornflour
½ cup cold water
200g AYAM™ Vermicelli Noodles
Spring onions to garnish

Method:

Heat the vegetable oil in a wok or non-stick fry pan over medium-high heat.
Add the pipis, XO Sauce and Oyster Sauce and stir-fry for 2 minutes or until the pipis open.
In a bowl, add cornflour and cold water and stir to combine.
Add mixture to pan and stir to thicken sauce.
Add Sesame Oil and stir-fry for 30 minutes.
Garnish with spring onions.
Serve with blanched Vermicielli noodles or steamed rice.

Tip: Substitute pipis for claims if they are not unavailable.
